If you’re ever running short on ideas for a quick and tasty vegan breakfast, then I have a list made and created for you! You see I LOVE breakfast but there are some mornings I just have no idea what to eat.

With this said, throughout my many mornings of struggling to decide what to eat, I have discover 5 “go-to” breakfasts that will suit any mood you’re feeling.

My recipes are one-of-a-kind, which means that most of the ingredients will be alkalizing, energizing, low calorie, high-protein and easy/quick to prepare and make.

Usually in the mornings I am starving so I want something that is quick to get in my belly.

I do also highly suggest drinking at least 1 litre of water with lemon before eating as well as a green juice every morning before breakfast. To so many women this may seem unrealistic and like a major stretch but please give it ago! It will help you go regularly and really boost those energy levels of yours to go, go, go all throughout the day.

 

Enough of me talking, let’s get into the nuts and bolts of these awesome 5 recipes because I am so eager to introduce you to them

Breakfast Smoothie and ½ Grapefruit

Serves 1

Ingredients:

  • 1 serve Raw vegan sprouted Vanilla Protein powder
  • 1 Lebanese cucumber
  • Handful of spinach
  • ½ cup frozen broccoli
  • 1 tbsp. flaxseeds
  • 1 serve of Fibre mix
  • 1 lime, peeled
  • ¼ tsp. stevia
  • 1 try of Ice
  • ½ grapefruit (consume separately)

 

Directions:

 

  1. Half a grapefruit and peel skin and white parts off really well before consuming your smoothie (For the benefits of grapefruits click here)
  2. Combine all ingredients (expect for grapefruit) in a blend
  3. Add a bit of water
  4. Blend till you reach your consistency
  5. Serve in a bowel or glass and enjoy!

 

Tofu Scramble with Cold Pressed Juice

Scrambled Tofu

Serves 1

Ingredients For Juice: (make and consume first)

  • 2 Lebanese cucumber
  • 2 celery stalks
  • Handful of spinach
  • 1 tsp. chuck of ginger
  • ½ large lemon or 1 small lemon

Directions:

  1. Assemble your cold-press juicer
  2. Roughly chop your veggies into small chunks
  3. Juice your cucumber
  4. Juice your lemon
  5. Juice your ginger
  6. Juice spinach
  7. Juice your celery
  8. Add water to wash out remaining juice
  9. Serve in your glass

Ingredients for Tofu Scramble

  • 150g Firm organic non-GMO tofu
  • ¼ onion
  • 1 garlic clove
  • ½ tsp. smoked paprika
  • ½ tsp. dried parsley
  • ½ tsp. turmeric powder
  • Salt
  • 1 tsp. olive oil
  • 1 tomato, cut into thirds
  • ½ avocado
  • Handful of spinach

Directions:

  1. Preheat grill to 200 degrees Celsius
  2. Sauté onion and garlic in water, until soft
  3. Roast tomato in grill for 5 minutes
  4. Crumble tofu into small chunks straight into the pan with onion mixture
  5. Cook for a 3 minutes
  6. Add seasoning
  7. Add 2 tbsp. water and place a lid over the tofu to “steam” for 3 minutes
  8. Serve grilled tomatoes, handful of fresh spinach and avocado on a plate
  9. Serve tofu last on your plate and drizzle olive oil all over your brekkie and season with salt and cracked pepper!
  10. Don’t forget to enjoy your cold pressed juice first

Breakfast Crackers and Cold-Presses Green Juice

Serves 1

Ingredients For Juice:

  • 2 Lebanese cucumber
  • 2 celery stalks
  • Handful of spinach
  • 1 tsp. chuck of ginger
  • ½ large lemon or 1 small lemon

 

Ingredients for Breakfast Crackers:

  • 4 brown rice crackers
  • 1 avocado
  • 2 tomatoes
  • 2 handfuls alfalfa sprouts
  • Salt and Pepper

 

Directions:

  1. Consume your cold-presses green juice first
  2. Cut avocado into quarters
  3. Spread avocado onto rice crackers
  4. Season with salt
  5. Slice tomato thinly
  6. Add tomato on top of avocado
  7. Season tomato with cracked pepper and salt
  8. Top with alfalfa sprouts on each rice cracker

Quinoa Porridge and Pressed Green Juice

Serves 1

Ingredients For Juice:

  •  2 Lebanese cucumber
  • 2 celery stalks
  • Handful of spinach
  • 1 tsp. chuck of ginger
  • ½ large lemon or 1 small lemon

 

 

Ingredients for Quinoa Porridge:

 

  • ½ cup uncooked quinoa
  • 1 tbsp. flaxseeds
  • 1 tbsp. almonds
  • 1 tbsp. pumpkin seeds
  • 1 cup unsweetened. Almond milk
  • ¼ cup mixed berries
  • Stevia

 

Directions: (this can be prepared the night before If short on time in mornings)

 

  1. Enjoy your green juice first
  2. Cook quinoa with 1 cup of water for 15 minutes
  3. Serve quinoa in bowl
  4. Add flaxseed, almonds, pumpkin seeds, mixed berries, stevia and almond milk to the quinoa and combine well
  5. Serve and enjoy straight away or put in fridge the night before enjoying it!

 Vegan Protein Pancakes

Serves 1

Ingredients For Juice: (make and consume first)

 

  • 2 Lebanese cucumber
  • 2 celery stalks
  • Handful of spinach
  • 1 tsp. chuck of ginger
  • ½ large lemon or 1 small lemon

 

Directions:

 

  1. Assemble your cold-press juicer
  2. Roughly chop your veggies into small chunks
  3. Juice your cucumber
  4. Juice your lemon
  5. Juice your ginger
  6. Juice spinach
  7. Juice your celery
  8. Add water to wash out remaining juice
  9. Serve in your glass

 

Ingredients for Vegan Protein Pancakes:

  1. 1 serve Sprouted Raw vegan vanilla protein powder
  2. 20g flaxseeds or flaxseed meal
  3. 6 tbsp. water
  4. 40g wheat germ (or oat bran or coconut flour)
  5. ¼ tsp. baking powder
  6. Stevia
  7. Cinnamon or 1/3 cup mixed berries, depends on what you’re feeling
  8. 1 tsp. coconut oil

 

Directions:

  1. Enjoy your green juice first
  2. Combine in a small bowl flaxseeds and water and set aside for 5 mins
  3. Combine in a new bowel the remaining ingredients expect coconut oil
  4. Add flaxseed gel to protein mixture and mix everything well
  5. Heat pan to low-medium heat and add coconut oil
  6. Make 3-4 small balls and then squish with your palms to make mini pancakes
  7. Cook each side for 2-3 minutes.
  8. You will know their done when they feel firm in centre and show colour
  9. Serve and enjoy!
